What does Organic Wine Making Mean to La Pomme? It means nothing is added, period. No additives, no chemicals and the apples that become La Pomme are Organically Grown, which means No Pesticides.

Too often that bad feeling in your head that sometimes can accompany your favorite wine may be caused by one or more of the chemicals that are added during the wine making process. Following is a partial list of chemical additives that may be used during the wine making process:

  • Bentonite – This is a clarification agent and is used to prevent hazy wine.
  • Calcium Carbonate or Potassium Bicarbonate – Both of these chemicals are used as acid reducers.
  • Citric Acid – May be added to increase the acidity of wine and to prevent cloudiness mostly in white wines.
  • Potassium or Sodium Metabisulfite – These are both sanitizing agents that are also used to kill wild yeast.
  • Diammonium Phosphate – Basically a food for yeast to help fermentation along.
  • Divergan F – Used to prevent wine from getting hazy or cloudy when refrigerated.
  • Dry Pectic Enzyme – An additive to help fermentation and make clarification easier.
  • Mimosa Extract, Tannin Power, Tartaric Acid – A clarification aid used mostly in fruit wines.
  • Potassium Bicarbonate or Calcium Carbonate – Another way to reduce acid.
  • Potassium Metabisulfite or Sodium Metabisulfite – Both of these produce sulfites in wine.
  • Potassium Sorbate – A kind of preservative for sweet wines.
  • Fermaid – A yeast food used mostly in non-grape fruit wines.
  • Silicium Dioxide – Has the smell of rotten eggs and is used to enhance the flavor of wine.
  • Lysozyme – This controls certain types of bacteria.
  • Sparkalloid – Aids in the finishing process.

These are only some of the more then 100 chemicals that may be used in the wine making process and may be present in the finished wine. When you open a bottle of La Pomme you are assured that not one of these are present and that’s a promise.
